Baked loin with champignons


  • 400 g of pork loin
  • Breadcrumbs to taste
  • Extra virgin olive oil
  • salt
  • 600 g of fresh sliced ​​champignon mushrooms Monalfungo
  • Parsley
  • 1 clove of garlic


Time 45 minutes, medium difficulty

  1. Remove excess fat from the loin. Then spread the meat well with oil.
  2. Bread the meat in a flat plate with the breadcrumbs trying to make the breading adhere well. Line a baking sheet with parchment paper, grease it with a drizzle of oil and put the loin.
  3. Bake at 200 degrees for about 30 minutes, halfway through cooking add salt and turn the meat.
  4. Put the champignon mushrooms in a pan with two tablespoons of oil and the garlic clove cut in half. Once golden, add the mushrooms, salt and cover.
  5. After 5 minutes remove the lid and continue cooking for another 10 minutes.
  6. When the loin is almost cooked, cover with the mushrooms and allow to flavor for a few more minutes. Finally add the parsley and serve.
