- 400 g of pork loin
- Breadcrumbs to taste
- Extra virgin olive oil
- salt
- 600 g of fresh sliced ​​champignon mushrooms Monalfungo
- Parsley
- 1 clove of garlic
PREPARATION
Time 45 minutes, medium difficulty
- Remove excess fat from the loin. Then spread the meat well with oil.
- Bread the meat in a flat plate with the breadcrumbs trying to make the breading adhere well. Line a baking sheet with parchment paper, grease it with a drizzle of oil and put the loin.
- Bake at 200 degrees for about 30 minutes, halfway through cooking add salt and turn the meat.
- Put the champignon mushrooms in a pan with two tablespoons of oil and the garlic clove cut in half. Once golden, add the mushrooms, salt and cover.
- After 5 minutes remove the lid and continue cooking for another 10 minutes.
- When the loin is almost cooked, cover with the mushrooms and allow to flavor for a few more minutes. Finally add the parsley and serve.
